The College Gourmet

With red roses blooming in flower stands and pink hearts adorning every store display, the marketing effects of Valentine’s Day are fulfilling its cause: to remind everyone that the time to express how they feel about someone special is approaching.
While plush teddy bears and boxes of assorted chocolates have reigned as safe gift choices, another effective and thoughtful present this year could be a delectable meal, where you play the chef.
To aid you in a culinary gift that your sweetie will appreciate, I’ve compiled a few simple, yet enticing recipes.

Herb Crusted Salmon

2 pounds salmon fillet
Salt and pepper
1 shallot
4 garlic cloves
1 or 2 tablespoons fresh dill
1 or 2 tablespoons fresh lemon thyme
1 or 2 tablespoons fresh cilantro
Lemon zest
1 yellow chili
1 lemon, juiced
3 tablespoons olive oil

Oil the bottom of a casserole dish. Place salmon in dish and sprinkle with salt and pepper. Chop and combine the following in a bowl: shallots, garlic, herbs, lemon zest, chili, lemon juice and olive oil. Cover salmon with mixture and place in a preheated 350 degree oven for 25 to 30 minutes or until a fork pulls out smoothly from the thickest part of the salmon.
